How to use environment variable on windows

How can we specify environment variable on Windows OS,

E.g. For instance, how can we install Symfony 5.4 on windows OS?
SYMFONY_VERSION=5.4.* docker compose up --build
retuns:

'SYMFONY_VERSION' is not recognized as an internal or external command,

I think I found:

set SYMFONY_VERSION=5.4.*&& docker compose up --build&set SYMFONY_VERSION=
